Recipe warning

I need to issue some words of warning. The following presentation is X Rated, contains adult themes and graphic references and is not recommended that  dieters or people fearing calories continue reading. Parental Guidance is recommended for those watching their carbs and there are some explicit carb on carb scenes contained within.

Ok, ok...  I must admit to you...

This is something that I will snack on when I'm cooking it.  I know that I do a lot of preaching about the wonders of low carb lifesytle eating, but this has brown sugar in it.....yep the real thing.  I tried desparately to make this low carb and although I could make something that tasted good, it couldn't ever compared to what this tastes like.

I recently made this for a famous chef , (and her entourage),who came to stay with me in one of my villas and she just about flipped for the recipe.

look at this:

This recipe is not mine.  I have been using it for years and I simply love it.  There are even variations of this recipe.  It comes from a place called blue smoke bbq and they've got the trick to doing bbq right!  I hope you can snack on this if you've been low carbing it all week long and deserve some fun carbs.

RECIPE:

Juancho's Mustard Dry Rub #2

ingredients:

2 tablespoons    Sea Salt, no iodine, ground medium coarse

2 tablespoons  Black Peppercorns (ground medium-coarse)

4 tablespoons  Brown Sugar (packed tight)

2 tablespoons  Garlic Powder

6 tablespoons  Mustard Seed, yellow or brown, ground coarse to medium coarse

Preparation

Grind the individual ingredients using a mortar and pestle, but don't overdo it. The mustard should stay coarse; as soon as all seeds are broken it should be good enough.

Put all ingredients in a non-reactive bowl and mix everything thoroughly. Break any lumps of brown sugar using the back of a spoon, or use your fingers.

Use about 2 to 3 tablespoons of rub for every 2 pounds (about 1 kilo) of ribs. (for thicker meat use an extra tablespoon of rub for every 2 pounds)

The above will yield about one cup of dry rub. Put the remaining rub, if any, in an airtight jar or zip-lock bag. Stored in a cool and dark place it will keep for at least a couple of months.
